
Tasty Tuscan Chicken Pasta
Comforting & creamy....a real family favorite. This dish is perfect when you want to make something hearty, but don’t have a lot of time. The flavors really come together so if you love pasta, try this yummy recipe.

Directions
In a large pot of boiling water (add salt)
Cook pasta according to package directions
Drain, reserving 1 cup pasta water
Heat oil in a large skillet over medium-high
Season chicken with salt and pepper
Cook until no longer pink inside, (approx 8 minutes per side)
Slice meat to your liking
Cook bacon with medium heat until crispy
Drain on a paper towel–lined plate, then slice to your liking
Pour out a bit of the grease from skillet
Add garlic, tomatoes, and spinach to skillet and cook with medium heat
Add salt and pepper, add heavy cream, Parmesan, and 1/2 cup of water
Simmer for approx 5- 10 minutes
Add cooked pasta and stir or toss
Add chicken and bacon and stir or toss
Garnish with basil

Pre-heat oven to 400°F.
Spray 13x9-inch (3-quart) glass baking dish with cooking spray
In large bowl, mix berries, sugar & cornstarch then pour into baking dish
Bake uncovered for approx 15 minutes
Stir muffin mix, milk, oil and eggs into bowl and blend
Pour batter over filling in baking dish
Sprinkle with topping from muffin mix box
Bake 25 minutes longer or until your liking
Serve warm

1/4 cup cornstarch
muffin mix
3/4 cup milk
1/4 cup vegetable oil
2 eggs
